Winter Salad with purple cabbage

This time of the year greens often look sad and floppy.

Good time for a crunchy and super easy Winter Salad :

 

Shred or cut very fine slices of red cabbage – about one cup

Cover the cabbage with boiling water and add half a tea-spoon of salt to soften

Cut one apple and one pear into fine pieces – you can shred them as well, but I prefer the texture of small pieces

Drain the cabbage

Add :

3 tablespoons olive oil

3 tablespoon vinegar – i like Balsamico, but if you like more acidity use your favorite

Freshly ground black pepper , add salt if you need to

mix in the cut fruit

This gets even better if it marinades over night
